Major Functions: Responsible for the service of all food and beverage catering. In so doing, is expected to direct all catering service efforts toward guest satisfaction, the achievement/maintenance of division standards, and profit maximization. Major Responsibilities: Primary Maintains organization for banquet service areas Reviews menu/service (BEO) with event managers and banquet chef on a daily basis Communicates any additional set-up requirements with head houseman and event managers Coordinates all food requirements with the kitchen including accurate counts for preparation and plating Coordinates all liquor requirements with the beverage manager Assigns work/functions to banquet captains and servers Maintains up-to-date details on banquet functions and communicates changes to banquet captains Responsible for hiring and initial training of all catering service associates Responsible for any ongoing training of captains/hourly service associates which is necessary to maintain our standards of service and profit margins Responsible for labor costs of all service associates; therefore, supervises the scheduling of hourly service associates and reviews schedules in terms of coverage and adherence to budget guidelines Responsible for maintaining budgeted banquet beverage cost Communicates with event managers in obtaining menu guarantees and guest comments Directly supervises the work on banquet captains and personally observes the performance of hourly service personnel Directly responsible for the grooming standards and appearance of all catering service associates Insures that all scheduled catering functions take place on time and according to plan Makes personal contact with guests and assists them with any requests Supervises proper tabulation of all banquet checks Prepares (or reviews) a critique made of every catering function. All problem areas should be noted and either corrected or a proposed solution should be forwarded to the Director of Event Operations Conducts “Pre-Function Briefings” Attends weekly function meeting Keeps copies of all BEOs along with beverage requisitions Responsible for control and maintenance of all service equipment. Write work orders as necessary Brings to the attention of the Director of Event Operations all materials and equipment that require re-ordering or need to be replaced Recommends new products and/or methods of operation to the Director of Event Operations Secondary Responsible for the maintenance of discipline and high level of morale among catering service associates Insures that all guest and associate complaints or requests are handled quickly and fairly Responsible for reporting all guest and associate accidents immediately to the event manager, so that accident reports may be prepared/further assistance may be obtained (if necessary) Responsible for maintaining a high level of sanitation and cleanliness in service areas Responsible for maintaining ongoing energy conservation and loss prevention programs among service associates Responsible for training captains in all aspects of the Banquet Manager position, so that they may take on total responsibility in the Banquet Manager’s absence General Duties Adhering to all division and local standard policies and procedures Performing all guest contact activities in a cordial, efficient and professional manner at all times maintaining a commitment to EXCELLENCE. Maintaining a cooperative, team-like attitude in working with supervisors and fellow associates (both within the department and in other hotel departments), to help achieve our common goals of maximizing guest satisfaction. Maintaining a POSITIVE ATTITUDE toward the hotel and the job being performed. Reporting to work on time (as scheduled) and in proper uniform. Policy Page Assist all guests in problems and questions as required. Ensure that all guest problems are resolved. Assist fellow associates in their jobs to ensure that all jobs are done on time. Have knowledge about all emergency procedures and know how to act on them.____ initials Must be flexible in regard to work schedule. Have knowledge about the city, the local area and attractions to provide guests with all requested information. Report any unusual occurrences or requests to the manager or supervisor. At all times strive to represent Amway Grand Plaza in the most professional manner. Be disciplined at all times, stand alert and tall, greet guests immediately and offer assistance before the guest needs to ask. Focus your total attention to the guests. Safety Awareness Maintain safety by adhering to safety policies, and be responsible to report accidents immediately. Support all safety programs. Proceed with caution when walking on slippery floors and congested areas. Ensure that proper safety instructions are given before operating any equipment. Ability to deal with the public in a professional and courteous manner. Other Requirements Ability to deal with the public in a professional and courteous manner. Ability to communicate with all managers and supervisors and fellow associates. Knowledge of English language. Ability to handle conflict situations in a professional manner. Notice The Amway Grand Plaza Hotel functions seven (7) days a week, twenty-four (24) hours a day. You, as an associate, must realize this fact and be aware that at times it may be necessary to move you from your accustomed shift, as business demands. In addition, you understand that business determines the amount of hours you work, and that some weeks you may be scheduled to work less than forty (40) hours, an on other weeks you may be scheduled to work more that forty (40) hours per week.
