OPEN TO THE PUBLIC Siniikaung Steakhouse, Full Time, 2nd Shift POSITION SUMMARY: Assures that Guests of the Soaring Eagle Casino & Resort receive the highest quality levels of food when dining in our restaurants. Supervise culinary line staff to ensure that all food is prepared at the highest standards of quality. ESSENTIAL JOB DUTIES AND RESPONSIBILITIES: Ensure strict levels of control in regards to H.A.C.C.A.P., quality, safety, recipe adherence, prep and pull, production lists, and overall training. Maintains all sanitation rules and regulations. Must be able to pass Serve Safe certification. Supervises area personnel. Assist Department Chef with departmental reports, paperwork, recording of attendance, and dealing with employee issues. Estimate food costing where applicable, be familiar with inventory, and ordering procedures. Directs the assignment of personnel where applicable. Investigates and resolves food quality complaints and service complaints if needed. Insures all food preparation and methodology are in keeping with classical culinary standards. Over sees Lead Cook in assisting Department Chef and Manager in all aspects of internal inventory control. (counts, ordering, proper rotation of products, cooler cleanliness and maintenance) Responsible for scheduling Lead Line Cooks and line employees for the outlet. All other duties as assigned. ACCOUNTABLITY: To ensure that all foods are prepared with the highest of standards of taste and presentation and to never compromise quality. CONTACTS/PURPOSE OF CONTACTS: Maintains contact with associates to offer guidance in day to day duties. Also, maintains contact with the Executive Sous Chef and other managerial staff to ensure our Guests are receiving the best service possible. WORK ENVIRONMENT/SAFETY HAZARDS: Frequent use of hands, wrists, fingers associated with the cooking of food. Frequent bending, stooping, reaching, walking, standing and lifting required. Use of kitchen equipment such as stoves, pots, pans, and knives daily. MINIMUM QUALIFICATIONS: Must be 18 years of age with a high school diploma or equivalent. Culinary degree from an ACF (American Culinary Federation) accredited school or must have five (5) years direct experience in food production. Must have excellent supervisory, organizational, and food production skills. Must have ability to comprehend house training and pass by 65% standardized written culinary competency test and by 70% product I.D. and cooking practical test. This is a KEY position – Must be able to obtain and maintain a gaming license.
